Olio Extra Vergine di Oliva Estratto Freddo
Our small Batch Production at Podere Lepre Bianca
In the heart of Tuscany in Torito de Sienna, is our boutique olive Grove. Our grove consists of just 50 carefully tended trees. This past year, in 2025, we produced 47l of premium cold-pressed extra-virgin olive oil.
At Podere Lepre Bianca, we are committed to quality over quantity, and ensure that our olives are cold-pressed within 24 hours of harvest, which preserves their bold character and freshness. The olives are hand-picked before full maturation. Our olive oil is robust with a natural pepper finish — a hallmark of Tuscan olive oil.

Tuscan Olive Oil
Tuscan olive oil is known for its bold, intense flavor and is considered among the finest in the world. Its distinctive profile fruity, herbaceous, peppery, and slightly spicy — comes from the region's olive varieties, climate, and traditional harvesting methods. Because the olives are picked early, they have a polyphenol content, which gives Tuscan olive oil its pungent “green” character. The most skilled part of the process is determining the perfect time to harvest, as this ultimately shapes the oil’s flavor and character.
Once bottled, the oil should be kept away from direct sunlight and extreme temperatures — a cool pantry or seller is ideal. After opening, it's best to use within a year to enjoy the rich flavour.
